Preparing a good cheeseboard for parties

By Hellan Bach of Herpuniverse.com/forum

This is the time of year when people like to put together a good cheeseboard for dinner parties. The basic rule is not to go over the top. Some people think that quantity is better and sacrifice quiality, really the maximum should be six with the minimum of three.

If your not sure what to choose, you can buy some very good pre-prepared cheeseboards is most supermarkets, if you prefer to make your own from scratch then read on for some good reccomendations.

Stilton
No cheeseboard is complete without a good stilton. You can get mild creamy stilton which is usually about six weeks old, or a more mature stilton, which is around 10-12 weeks old. Stilton should have even veining and no cracks on the crust.

Brie
The next must have cheese is a good brie, remember to take it out of the fridge a good 40 mins to one hour before serving, as a good brie should be quite runny in texture.

Cheddar
Cheddar can be mild, medium , mature , extra mature and vintage, so it comes down to your own individual taste as to which you choose for the cheeseboard.

Cheshire
Cheshire cheese has a crumbly texture, with lemony overtones and a white crust, it is a good cheese for cleansing the palate.

Wensleydale with cranberry
This is a fun festive cheese with quite a sweet taste, and adds some colour to the cheeseboard.

soft goats cheese
This cheese has a very nice taste and adds a bit more variety to the cheeseboard.

How to serve the cheeses

Ideally the hard cheeses will go around the outside edge of the cheeseboard with the softer cheeses in the middle, add some grapes, sliced apple olives and maybe a small bowl of wallnuts to make the board look visually appealing.
The choice of weather to serve with biscuits or bread is down to individual taste, or have a variety of crusty breads and different biscuits to offer your guests a choice.
Keep cheeses in the fridge but remember to get them out 40 mins before serving so theyre at room temperature.

Traditionally the best drinks to serve with cheese are red wine or a mature port.
